I’m offering a free chocolate making demo for friends and fans at my house: this Sunday, July 26, 2015 and Monday July 27, 2015 from 9-12AM each day. RSVP to attend please via email, Facebook message, phone, or comment below.  I’m limiting attendance to the first 6 responders, otherwise it gets pretty crowded.

I’m clean out of homemade chocolate, and I want to practice demonstrating the process to others before I start offering paid workshops, so here’s your opportunity to attend a chocolate making demo.

I’ll be making a 65% cacao, all natural chocolate with a Peruvian Criollo cacao bean called “Tumbes.” It will be a semi-sweet, dark, fine textured chocolate.  This particular bean is described as “The flavors are nutty and wonderful. There are savory flavors galore. Nuts, and biscuit and mouth watering fruitiness and a flavor I can’t put my finger on. There is a rich backbone of chocolate which is solid without being too subtle or too bold, and is balanced by a very slight bitterness, but hardly any astringency to speak of.”

The first morning (Sunday) I will be roasting, grinding, and winnowing the cacao beans.  Then I’ll be doing the recipe calculations by weight, measuring the ingredients, and we will start the refining process.  The refining will continue in the machine until the next day.

The second morning (Monday) I will be tempering the chocolate in a special tempering machine I have, and cleaning the refining equipment.  Then I’ll add some flavor bits to some of the chocolate, then mold, cut, and package the yummy stuff.

Attendees are welcome to help out or not, as you wish.  Just come after you shower, with clean clothes…after roasting the beans there is always a chance for contamination, which reduces shelf life.

I hope you can come to this chocolate making demo, either or both days!  It is a really fun process.  Fresh roasted and brewed coffee will be on.
